Despite all the advances we've made in science, medicine, and technology, many of the foods we consume weaken our body rather than strengthen it. This, coupled with our past-paced, high-stress lives, and environmental pollution, has created an epidemic of degenerative diseases and premature aging. All our study and research suggests that if we give the body the right tools, it can correct most imbalances caused by today's poor nutrition, stress, and environmental pollution.

Over the last few decades, there has been a dramatic shift from wholesome farm-fresh foods to over-cooked, chemically preserved, enzyme deficient, nutritionally poor "convenience" foods. Convenience appears to be more important than health. As a result, the digestive process and the retrieval of life-giving nutrients from our foods has been severely compromised.

What are Enzymes?

Enzymes are complex molecules, vital catalysts that are needed for every chemical reaction in the body. 

There are two major types of enzymes - metabolic and digestive. Metabolic enzymes help build body structure. Digestive enzymes work to break down large food molecules into smaller, readily absorbable building blocks the body requires. Naturally grown foods contain the enzymes necessary to break the food down to the essential nutrients the body needs. Nature provides enzymes in food to aid in the digestion process so that the body doesn't have to use its enzyme reserves to do all the work. 

But when we process, refine, overcook, or microwave our food, most if not all enzymes are rendered useless. At a temperature above 118 degrees Fahrenheit, all enzyme activity is destroyed. When we consume cooked or highly processed foods, our digestive system has to produce the enzymes necessary to digest what was eaten.

Our Digestive System

The purpose of our digestive tract is to extract and absorb the essential nutrients contained in our food. Consuming cooked foods can cause our body to take enzymes from the liver, pancreas, and other organs to use in the digestion process. Over time, this can cause these organs to be stressed which can weaken our immune system and slow down our metabolism.

When we consume enzyme-deficient food, the food sits in the upper portion of the stomach putrefying instead of being predigested (due to a lack of enzymes). The body reacts by increasing the white blood cell count as the immune system begins to treat the undigested food as a foreign substance. The body further stresses itself to produce extra digestive enzymes to digest this putrefying material, reducing its ability to produce metabolic enzymes for cellular activity. If stomach acids are not able to complete their work before the food moves into the small intestine, the food particles can enter the blood system undigested!

This putrefied material coats the small and large intestines, reducing the absorption of nutrients and hindering the expulsion of toxins through the intestinal wall. Bacteria and viruses feed and multiply, causing the body to become susceptible to infection, fatigue, and degenerative disease.

Our Worst Enemies: Enzyme Inhibitors

Enzymes naturally occur in all raw and fresh foods and they support the body during the digestive process. Most modern techniques of food preparation or preservation (cooking, barbecuing, microwave, pasteurization, irradiation, canning, etc.) all destroy necessary digestive enzymes. There are also substances in our food, drugs, cleaning products, toothpaste, tanning products, drinks, etc., that destroy the enzymes in our body. These are called Enzyme Inhibitors. Here is a small list:

  • heavy metals (mercury in amalgams, cadmium in seafood, aluminum in antacids)
  • food additives (food coloring, preservatives, and sapidity agents)
  • pesticides (atrazin, round-up, DDT)
  • prescription, over-the-counter, and illegal drugs (aspirin, Tylenol, cocaine)
  • solvents (methanol, ethanol, propenol, formic acid, ethylene glycol, benzene, butanol)
  • alcohol
  • coffee
  • free radicals (the body produces free radicals during leucocytosis)
  • second-hand smoke.
Take for example a steak grilled on a charcoal barbecue. You will find as many enzyme-destroying and cancer-producing substances as in several hundreds of cigarettes. Moreover, with all the years of eating cooked and difficult-to-digest foods, the body becomes more and more acidic, therefore slowing down the activity of enzymes because enzymes react negatively to variations of pH levels and to accumulated mutagenic substances.

Stress, accidents, and disease also affect the quantity of enzymes produced and unfortunately also their quality. All of these factors as a whole accelerate the aging process. Who occasionally does not suffer from bad indigestion, gas, bad breath, migraines, constipation, skin problems, fatique, allergies, sugar cravings, lack of concentration, etc.?

By the same token, we think that the wide range of vitamins, minerals, green foods, hormones and drugs will put us back on the right track. But that's like beating a dead horse with a stick. This will only result in adding more stress to our body, because not only does our body needs enzymes for proper absorption, but also to eliminate the excess!

The body produces digestive enzymes when needed by adapting very quickly to the richness or the lack of enzymes in the food bowl. However, the ingestion of cooked, pasteurized and mostly canned food causes a digestive leucocytosis or immune response, more or less important, depending on the condition of the intestinal tract (intestinal permeability) and the quality of the ingested food (junk food considerably stimulates a state of leucocytosis).

In short, the ingested food usually requires more enzymes than normal. Aging causes our body to produce less and less enzymes and generates a slowdown of its digestive capability. More and more, certain food or bacterial particles that will not be completely digested will reach the blood and lymph. Present in these particles will be peptides (small proteins usually digested by peptidases) which will trigger various immune responses or will be perceived as hormonal. Some of the immune responses in the body produce morphine-mimicking substances. With time, the need for an undigestable food will increase because it will stimulate the production of this mimicking substance.

These hormonal and immune disorders will lead to a range of conditions: fibromyalgia, diabetes, hypoglycemia, arthritis, chronic fatigue, cardio-vascular diseases, allergies, cancer, sclerosis, circulation problems, hypo-thyroidism, mental illnesses, etc.

Digestive Enzymes are efficient and essential workers for restoring normal digestion, a strong immune system, and vital energy, therefore allowing each and everyone of us to react positively to the environment instead of being subjected to it.
